The longer the period of drying the deeper the flavour of the ham because aging imparts stronger, richer aromas.

The Nec Plus Ultra is a dried ham aged for a minimum of 18 months.  The Latin proverb "nec plus ultra" means "nothing further beyond" "the ultimate, highest point". The aroma and flavour of the Nec Plus Ultra is fragrant, highly balanced and ultimately refined.

It is an artisfnal, natural dried ham : contains no colouring, flavour enhancers, preservatives, nitrites and nitrates !  The only ingredients are : pork, sea salt, our passion for skill and traditional methods, patience and time...

The Nec Plus Ultra contains more than 60% unsaturated fatty acids.

After completing the curing process the ham is deboned, cleaned up and pressed into its specific shape to obtain a ham that directly can be nicely cut/sliced at the front and that has a short shank : in this way the cutting loss is reduced and the ham keeps its artisanal shape and character.
